Anzac Biscuits
With Anzac Day coming up this week, we thought we would make a recipe that is close to our hearts and remember those who fought for us.
- 1 1/2 cups rolled oats
- 1/2 cup shredded coconut
- 1/2 cup sugar
- 3/4 cup plain flour
- 1 tbs golden syrup
- 1 tsp bicarbonate soda
- 2 tbs boiling water
- 125g butter, melted
Preheat your oven to 160 degrees
Mix the oats, coconut, sugar and flour in a mixing bowl
Mix the golden syrup, bicarb soda and boiling water with the melted butter and while it is still frothing, add the dry mix to the wet mix
Scoop in to spoonful sizes and place on a lined tray. Allow room for spreading
Bake 18-20 minutes or until they turn a deep golden brown
Cool on the tray for 5 minutes and then transfer carefully to a wire rack
Store in an airtight container
Makes 18 biscuits
