Brazilian Chocolate Fudge Truffles

Brigadeiros are a Brazilian treat that is a cross between fudge and a truffle.  They are super easy to make and is a nice change from the usual chocolate for Easter. They also make a beautiful gift during any time of the year.

  • 395g condensed milk
  • 4tbs dark cocoa powder
  • 2tbs butter

Pour the condensed milk into a non-stick frypan.

Stir in the cocoa powder.

Heat gently and stir in the butter.

Keep stirring over a medium heat until the mixture starts to pull away from the sides (the time will depend on the size of your pan which can range from 5-15 minutes).

Scrape the caramel into a flat dish and cool in the fridge for an hour.

Roll into teaspoon sized balls and coat in grated chocolate, chopped pistachio, dried rose petals or coconut shreds.

Put them into petit four paper liners.

These keep best in the fridge, however the longer you cook the mixture, the firmer the caramels will be.

The recipe makes for 24 serves.
