Choose figs that are heavy and fragrant.
- ½ cup natural Greek yoghurt
- 1tsp soft brown sugar
- 2tbs caster sugar
- 1 ripe fig
- 1tsp roughly chopped pistachios
Spoon the yoghurt into a bowl, sprinkle the brown sugar over the yoghurt and place in the fridge while you prepare the figs. The brown sugar will melt into a lovely caramel sauce.
Heat a nonstick pan until very hot. Spread the caster sugar onto a saucer, cut the fig in half and press the cut half onto the sugar, when the pan is hot place the fig cut side down onto the surface. When the sugar caramelises and just before it burns retrieve the fig, pop the two halves on the yoghurt and sprinkle with pistachios.
