Chai Poached Plums

The ruby colours of Autumn plums are gorgeous and we’re so lucky to be able to enjoy them in many different ways. Whether its by popping some colour into salads, poaching them for dessert or as a snack on the go – they fit every in every meal of the day! The warm spices of Chai Tea also pair well with plums, so we thought we’d create a beautiful recipe for serving up on the weekend.

  • 4 Chai tea bags
  • 2 cups boiling water
  • 3/4 cup sugar
  • 6 Cardamom pods
  • 2 Star Anise
  • 1 Vanilla bean
  • 1kg Plums, halved and de-stoned

Steep the teabags in boiling water for at least 5 minutes.

Discard the teabags and pour the tea into a saucepan with the sugar. Bring to the boil over a gentle heat and stir to dissolve the sugar.

Bash the cardamom pods to bruise them as this will help release their flavour.  Split the vanilla bean and scrape out the seeds then add both the cardamom and seeds to the syrup mixture along with the star anise.

Add the plums to the syrup and simmer for 10-15 minutes.

Once the plums have softened, take it off the stovetop and cool it down before storing in the fridge until you are ready to eat them. This mixture can last up to a week.
