Chocolate Guinness Cupcakes with Irish Whisky Caramel Frosting

Celebrate St. Patrick’s Day and all things Irish with these lusciously moist and boozy cupcakes!

This recipe makes 20 cupcakes so they are great to share with a crowd although definitely meant for the adults only!

(You can also make them kid friendly by simply changing the frosting as the alcohol will cook out of the cakes)

  • 2 cups plain flour
  • 2 1/2 tsp bicarbonate of soda
  • 3/4 cup cocoa powder
  • 2 cups brown sugar
  • 150g melted butter
  • 3/4 cup sour cream
  • 2 eggs
  • 1tbs vanilla extract
  • 1 cup Guinness

Preheat the oven to 180c.

Sift the flour, bi-carb soda and cocoa powder into a mixing bowl and stir through the sugar.

In a separate bowl or jug, whisk the melted butter, sour cream, eggs, vanilla and Guinness until they are amalgamated.

Make a well in the dry ingredients and pour in the Guinness mix and then stir until there are no streaks or lumps.

Spoon into patty pans and bake 15-18 minutes.

Once it is baked, take out of the oven and cool on a wire rack.

Frosting Mix

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 2 tbs whiskey
  • 2 cups icing sugar

Cream the butter and sugar until the mixture is light and fluffy.

Add the whisky and beat it into the butter mixture.

Sift in the icing sugar and beat for another 3-5 minutes. It should be a light caramel color with the consistency of thick whipped cream.

When the cupcakes are completely cool and the icing mix is ready, you can start icing them!
