Frozen Mango Bars

Mangoes are prolific at the moment and I love extending their life by making these sweet treats. Make these when mangoes are in season and cheap, or when the mangoes are too soft to eat fresh.

  • 1 cup caster sugar
  • 3/4 cup water
  • 5 medium mangoes, flesh chopped
  • 1tbs fresh lime juice
  • 300ml thickened cream

Line a 22x22cm square tin or rectangular equivalent with baking paper or glad wrap.

Place the sugar and water in a saucepan over a low heat and stir to help dissolve the sugar, then turn up the heat to high and boil until the syrup thickens slightly. This should take about 5 minutes.

Pour the syrup into a heatproof jug and cool.

Puree the mangoes, then add the cooled syrup and lime juice.

Stir one cup of the mango mix into the cream and stir until it is thoroughly combined.

Pour the cream mixture into the tin and freeze.

Put the remainder of the mango mixture into the fridge.

When the cream is firm, pour over the remaining mango mixture and return the tin to the freezer for 3-4 hours or overnight.

After you have frozen for the recommended time, cut into approx. 15 bars and serve!
