Green Beans with Hazelnuts and Citrus Butter
This is quite possibly the most delicious way to eat green beans!
500g stringless green beans, topped and tailed
2 garlic cloves
1 lemon zested and juiced
1 orange zested and juiced
3tbs olive oil
1/3 cup chopped toasted hazelnuts
salt flakes and freshly ground black pepper
Steam or microwave the beans until they are crisply tender.
Smash the garlic cloves with the back of a large flat blade knife.
Add to a small saucepan with the orange and lemon zest, butter and olive oil.
Gently heat and simmer for a minute or two.
Add a couple of tablespoons of the orange juice and a tablespoon of lemon juice.
Taste and add more of either or both to your taste if you need to.
Plate the beans, sprinkle over the hazelnuts and then drizzle over the citrus butter.
Season with salt and pepper.
