Scallops with Anchovy

Summer is Party time and this is a sophisticated little snack to serve with a chilled glass of champagne! Only make this if you can get your hands on Ortiz anchovies, anything else will taste too harsh.

  • ¼ cup good quality mayonnaise
  • 1 tin Ortiz anchovies
  • 2tbs chopped chives
  • 1tbs lemon juice
  • 1tbs olive oil
  • 12 Scallops

Mash 3 anchovies into the mayonnaise and then add half the chopped chives and lemon juice.

Slice the remaining anchovies into 4 long strips each and roll each one into a coil. Set aside.

Heat a grill or bbq until very hot, toss the scallops gently in the olive oil to coat them place on the grill- as soon as you have placed the last scallop on, start turning them over in the same order, and when you have flipped the last scallop begin removing them from the pan in the same order again.

Place each scallop on a serving spoon or back on the cleaned scallop shells if you have them.

Top with a dob of the mayonnaise and an anchovy coil.

Sprinkle with the remaining chives and a grind of black pepper.
