Tomato and Lentil Soup

There’s nothing better than a bowl or mug of soup on a cold winters day.
This soup has punchy flavours, it is hearty and super fast if you have a few staples in the pantry. Make sure you use a good quality bacon, that hasn’t been pumped with brine otherwise you will end up with a watery mess in your pan to cook your veggies in. This is winter bliss severed with a cheese toastie.

150g diced bacon
1 onion, finely chopped
1 carrot, finely chopped
1 stalk celery, finely chopped
1-2 red chillies, finely chopped
1 heaped tsp garam masala
2 cups cooked brown lentils (you can used tinned)
400g tin crushed tomatoes
1 litre beef stock

Heat a large saucepan and add the bacon, cook over a medium heat until the fat is rendered out.
Add the chopped onion, garlic, carrot, celery and chillies and continue to cook until the onion is translucent.
Sprinkle the garam masala over the mixture and cook stirring until it is fragrant.
Add the lentils, chopped tomatoes and beef stock.
Bring the soup to the boil and simmer for a few minutes.
Serve with a swirl of sour cream and chilli sauce.
