White bean and Spring Onion Dip
Its the Long Weekend- friends, bbq and fun times.
This can be made in a flash, its mostly what you would have in the pantry and fridge and is a great last minute snack to knock up with a chilled glass of anything!
Slightly charring the spring onions first, gives the dip a smokey, sophisticated , cant quite put your finger on it quality.
I also used a clove of smoked garlic in my recipe and that amplified the flavour too.
For a different approach try putting a big smear under a tomato or green salad or spread on toast instead of butter for an epic sandwich.
6 spring onions, trimmed
1 can white beans (drained)
1 anchovy fillet
1 clove garlic, minced
1/2 cup plain yoghurt
Heat a non stick frypan to high and slightly char the spring onions in the dry pan, turning every now and then.
Remove the spring onions, turn down the heat to medium and add the anchovy fillet with a little of the oil from the jar [a small teaspoon should be enough] and then add the garlic, stir until the anchovy ‘melts’.
Roughly chop the spring onions and put everything in the food processor, blitz until it is smooth.
Taste and then season with salt and pepper.
Serve with crackers, toast, pita or crudités.
