We have a huge variety of fresh eggs- Cackleberry, Ella, Kalbarri, Happy Valley and Margaret River are just some of the brands. This egg recipe is great for Sunday brunch but we have also eaten this for an easy dinner.
The quantities are for 2 people, but can be easily multiplied for more.
- 1tbs olive oil
- 4 eggs
- 2tbs soft goats feta [we used Meredith Dairy]
- 1 green chilli, finely sliced
- 2 spring onions, finely sliced
- 1tsp dukkah
Heat the olive oil in a pan large enough to hold 4 eggs and cook until the whites are just set. Scatter the fetta, chilli and spring onions over the top and sprinkle with dukkah to serve.Back to Blog Page
